If you have time to spend 10 minutes at the market on the way home, you can make a quick and satisfying dinner almost instantly when you get home. I live right beside a Whole Foods market so I usually pick up ingredients there.
A Fast Favorite: Chicken Greek Salad
1 bag washed/chopped Romaine lettuce
1 small red onion, sliced
handful feta crumbles
handful restaurant style crotons
handful pitted Kalamata olives, cut in half if desired
a few cooked chicken tenders from hot bar or deli section, cut in bite sized pieces
dress with balsamic vinegarette
toss and serve with a hunk of French bread from the bakery section and/or a bowl of hot soup from the hot bar/deli area.
even easier – go to the salad bar at the store, assemble the lettuce, onions and croutons in a to go container – simply add the remaining ingredients when you get home.
when you take home this “instant” food and put it in your own dishes, it’s homemade with shortcuts.
