Buttermilk Biscuits

2 cups flour
3 tsp. baking powder
1/6 tsp. baking soda
1 tsp. salt
2/3 cup buttermilk
1/3 cup shortening

Mix flour and other dry ingredients. Add shortening(break shortening up into small pieces). Take flour and shortening into fingers and twist and let fall until it resembles small peas. Pour the milk into it and mix with hands very quickly until it comes together. Rake onto floured surface and knead a few times, just enough to get it to hold together, then pat out into a circle about 1/2 inch thick. Cut into biscuits. Brush bottom of 9X13 pan with melted shortening. Place biscuits in pan a little bit apart from each other and they will be crusty. If you don’t want them crusty, put them in close together. Brush biscuits with melted butter or shortening. Bake at 450 degrees for between 12-15 minutes. (one tip is that you should be quick in the preparation).
